HONEY-GLAZED BEETS 
1 can diced or sliced beets, drained
2 tbsp. butter
3 tbsp. lemon juice
1 tsp. grated lemon rind
1/2 c. honey
1/2 tsp. salt
1/2 tsp. pepper

Season beets with salt and pepper, lemon rind, and lemon juice. Place in casserole; cover with honey and dots of butter. Bake covered for about 15-20 minutes at 350 degrees or until glaze is just slightly brown.

The same recipe may be followed using orange juice instead of lemon juice and carrots instead of beets. The carrots should be pre-cooked. Cooked squash may be used - hubbard, banana, acorn - whatever is available in the markets.
