2 tbsp. butter
2 tbsp. flour
1 tbsp. honey
2 tbsp. light brown sugar
2 tsp. lemon juice
3 c. cooked beets

Melt the butter in a saucepan, then stir in the flour. Add the honey, sugar and lemon juice. Simmer, stirring constantly, until thickened and clear. Add the beets and heat through.
