HONEY BEET PICKLES 
2 c. honey
1 c. vinegar
2 cinnamon sticks
6 whole cloves
fresh beets, whole or sliced

Fill jars with beets to within inch of jar rim. Heat honey, vinegar, cinnamon and cloves to boiling. Pour over beets to one-half inch of top. Place lids on; put in water bath. Process about one hour.

Yields enough juice for 5 pints of packed beets.
