DAN'S OATMEAL COOKIES 
1 cup dark brown sugar
1/2 cup sugar
1/2 cup (1 stick) butter
1 tsp. vanilla or almond extract
1 egg
1/4 cup water
1 cup old-fashioned oatmeal
2 cups quick-cooking oats
1 cup all purpose flour
1 tsp. salt
1/2 tsp. baking soda
raisins, nuts, coconut flakes (optional)

Preheat oven to 350°F. Grease cookie sheets.

Beat sugars, butter, extract, egg and water until creamy. Add oats, flour, salt, baking soda and any or all options and mix well.

Drop on cookie sheets (press to 3/8-inch, they do not spread).

Bake at 350°F for 15 minutes.

Makes 2 to 3 dozen cookies.

These cookies are just what I was looking for! They're easy to make and the flavor is fantastic. I had some oats in my pantry so I decided to try them, and they turned out great. The only downside is that they don't last very long as the kids and I can't resist eating them! Definitely worth trying!
