WILD RICE HOT DISH
1 lb. wild rice
1 lg. onion, chopped
Several stalks celery, chopped
2 cans mushrooms (whole or sliced as you prefer), drained
1 can beef consomme
1 lb. ground beef or veal, browned (1 or 2 cans of chicken can be used instead of or in addition to the beef or veal, if desired)
2 cans cream of mushroom or cream of chicken soup

Prepare wild rice in a double boiler. Boil onion in a small amount of water until slightly tender. Prepare celery the same way, but separately. Mix rice, onion and celery with the meat in a crockpot. Add mushrooms, consomme and soup and heat until very hot. Easy and popular potluck dish to serve a large group.
