CHEDDAR CHICKEN ROLLS | |
1 (4 oz.) pkg. (1 c.) shredded sharp cheddar cheese 1 tbsp. water 1 tsp. minced dried onion 1/8 tsp. dried tarragon, crushed 4 whole med. chicken breasts, skinned, halved lengthwise, and boned 3 tbsp. butter melted Combine cheese, water, dried onion, and tarragon; set aside. Place chicken breasts, boned side up, between 2 pieces of clear plastic wrap. Pound with flat side of meat mallet to 1/8 inch thickness. Remove plastic wrap; season both sides of chicken with salt and pepper. Divide cheese mixture among chicken breasts, spooning onto each chicken piece. Fold in sides and roll up jelly roll style. Be sure the folded sides are inside roll. Skewer closed with wooden picks. Place chicken rolls on baking sheet. Brush chicken with melted butter. Broil 5 to 6 inches from heat about 15 minutes. Turn and brush with butter broil 15 minutes more. Serves 4. |
