IRISH CAKE 
3 c. flour
1/2 c. sugar
1 tsp. salt
3 tsp. baking powder
1 1/2 c. milk
1 egg
1/2 lb. raisins
1 tbsp. caraway seeds
1/2 c. shortening

Crumble sugar, shortening and 1 cup flour. Add rest of flour and dry ingredients. Beat milk and egg; add to mixture. Bake in a large loaf pan (13 x 3 inch) or 2 small loaf pans. Bake 1 hour at 325 degrees.
