BANANA CREAM PIE 
2 c. milk
4 tbsp. cornstarch
1/4 c. light corn syrup
1/2 c. sugar
1/4 tsp. salt
3 eggs, separated
1 tsp. vanilla
1 (9 inch) baked pie shell
1 to 2 bananas, sliced

Scald 1 3/4 cups milk and syrup in top of a double boiler over simmering water (heat until bubbles form around edge of milk). Mix cornstarch, sugar and salt. Add lightly beaten egg yolks and remaining milk. Blend well. Stir into milk in top of double boiler and cook until thick, about 7 minutes over hot water.

Remove form heat and stir in vanilla. Cool. Cover pie shell with sliced bananas. Add filling and top with whipped cream (or make a meringue of egg whites and 6 tablespoons sugar). Bake in 400 degree oven until meringue is slightly browned.
