CHICKEN STRIPS IN GARLIC AND
BUTTER
 
2 lbs. chicken strips
Salt and pepper to taste
1/2 c. flour
3 cloves garlic, minced
1 c. butter
1 can condensed chicken broth

Sprinkle salt and pepper over chicken. Dust chicken strips with flour. Melt 1/2 cup of the butter and 2 cloves of the minced garlic in frying pan. Melt remaining 1/2 cup of butter and 1 clove of garlic in a 9 x 13 inch baking dish.

Saute the chicken strips in the garlic butter. (I add about 2 tablespoons of olive oil to keep the butter from burning). When chicken is golden remove to the baking dish. Sprinkle with parsley. Pour can of broth over chicken.

Bake at 325 degrees uncovered for 30-35 minutes. Stir occasionally - serve over rice. May be prepared ahead of time - just add 10-15 minutes to baking time.
