ONE-STEP WHITE SAUCE 
1 c. cold milk
2 tbsp. Gold Medal Wondra flour
1/4 tsp. salt
1/8 tsp. pepper
2 tbsp. butter

In saucepan, combine all ingredients. Heat to boiling over medium heat, stirring constantly. Boil and stir 1 minute. 1 cup.

CHEESE SAUCE:

(For vegetable, rice, macaroni, and egg dishes) : Add 1/4 teaspoon dry mustard and stir 1/2 cup shredded Cheddar or American cheese into hot sauce until melted.

CURRY SAUCE:

(For chicken, lamb, shrimp and rice) : Add 1/2 teaspoon curry powder.

EGG SAUCE:

(For fish) : Stir 2 hard-cooked eggs, diced, into hot sauce.

MOCK MORNAY SAUCE:

(For vegetables, meat, fish and eggs) : Add 1/4 teaspoon dry mustard and stir 1/2 cup shredded Parmesan or Swiss cheese into hot sauce until melted.
