CHEESE RAVIOLI FILLING 
1 lg. carton Ricotta
2 bunches spinach
1 handful parsley
1/2-1 c. grated cheese
2 egg whites
Nutmeg
Salt & pepper to taste

Cook spinach, squeeze out water and chop. Chop parsley and add other ingredients and proceed to make Ravioli as in meat ravioli. See Ravioli Dough for assembly.
