PORCUPINE BALLS 
1 lb. ground beef
1 1/2 tsp. salt
1/4 tsp. pepper
1/2 c. finely chopped onion
2/3 c. uncooked rice
2 tbsp. fat
2 c. canned tomatoes or juice or soup

Mix together ground beef, salt, pepper, onion and rice. Form mixture into 8-10 balls the size of an egg. Heat 2 tablespoons fat in skillet. Add meat balls, brown slowly, turning balls. Cover in the tomatoes. Cover skillet and cook over low heat 45 minutes.
