SPICED RAISIN SAUCE 
1 lb. seedless raisins
Water to cover
1/2 c. vinegar
3/4 c. brown sugar, packed
1/2 tsp. cinnamon
1/2 tsp. ginger
1/4 tsp. allspice
1 tsp. orange peel

Soak raisins in water 2 hours. Boil slowly until water is reduced to about one half. Add remaining ingredients and simmer until only a small amount of liquid is left and sauce is syrupy in appearance. Serve with baked ham, roast pork, leg of lamb, pork chops, duckling or tongue. Makes about 3 cups.
