PICANTE SAUCE 
1 qt. ripe tomatoes, scalded and skinned
1 green pepper, chopped
1 med. onion, chopped
1 jalapeno, chopped
2 cloves garlic, diced fine
1/2 c. vinegar
1 tsp. sugar
1 tsp. salt

Mix scalded and skinned tomatoes with green pepper, onion, jalapeno, and garlic. Add vinegar, sugar, and salt. Simmer 25 minutes. Add oregano to taste. Seal while hot. Recipe can be doubled.
