BLACK BOTTOM CUP CAKES 
Preheat oven to 375 degrees. Line muffin tins.

#1:

8 oz. cream cheese
1 egg
1/3 c. sugar
Pinch of salt
1 c. chocolate chips (semi-sweet)

#2:

1 1/2 c. flour
1 c. sugar
1/4 c. cocoa
1 tsp. baking soda
1/2 tsp. salt

#3:

1 c. water
1/3 c. vegetable oil
1 tbsp. white vinegar
1 tsp. vanilla

With a wooden spoon, blend items in #1. Add chocolate chips last; set aside. In another bowl mix dry ingredients in List #2. Then add liquid and mix well.

Fill muffin pans 3/4 full, then put 1 heaping tablespoon of #1 mixture into the center of each muffin tin. Bake until well done, 35-40 minutes. These are rich. Need no frosting. Store in refrigerator.
