PIMENTO CHEESE SPREAD 
1 lb. longhorn cheese
1 (4 oz.) jar pimentos, drained & chopped fine
3 tbsp. flour
3 tbsp. sugar
1 tsp. salt
1/4 tsp. dry mustard
1/2 tsp. paprika
1/8 tsp. black pepper
1/2 tsp. celery seed (if desired)
1 c. milk
1 egg
2/3 c. cider vinegar

Mix flour, sugar, salt, mustard, paprika, pepper and celery seed in a saucepan. Add milk and heat to boiling. Boil 3 minutes, stirring constantly. Remove from heat.

Combine egg and vinegar. Stir hot mixture into egg mixture and beat well. Chill. Grate cheese and combine with pimento. Add 1/2 cup of the dressing mixture and blend together thoroughly. Chill before using. Yield 1 quart.
