TWICE BAKED POTATOES | |
10 lg. baking potatoes, scrubbed and oiled and pricked 8 oz. Philadelphia cream cheese 2 sticks butter Salt and pepper 1 lg. can Carnation milk Parmesan cheese Paprika 1 egg, beaten Bake potatoes 375 degrees 1 1/2 to 2 hours. Cool and cut in half and empty shells. Add salt and pepper to taste, mash well. Meanwhile, heat on low the cream cheese, the 2 sticks butter. Take off heat when melted and add the beaten egg and mix well. Add this mixture to the potatoes alternating with the Carnation milk and whip well. Fill shells and sprinkle Parmesan cheese and paprika on each. Bake at 350 degrees for 1/2 hour. Can be made ahead and stored in refrigerator for a day or frozen. Put frozen halves in oven or microwave and bake until center is hot. |
