SWEET - SOUR RIBS | |
2 lb. pork spareribs, cut in 1" pieces 1 tsp. salt 1/2 tsp. gourmet powder (Accent) 2 tbsp. Accent 4 tsp. soy sauce 1 tbsp. water 2 c. brown sugar 1 c. vinegar 1 slice candied or crystallized ginger Mix cornstarch, salt, gourmet powder, soy sauce and water together. Drop in cut ribs and marinate for 10 minutes. Pour 1/4 cup cooking oil into a heavy kettle. (The Chinese prefer peanut oil, claiming it gives the meat extra flavor.) Brown the marinated meat in the oil, stirring so it will brown evenly. Drain off excess fat. Mix sugar, vinegar and diced ginger; pour over the meat. Bring to boil, turn heat to simmer and cook 45 minutes or until tender. Serves 4-6. Excellent way to fix elk and deer ribs. |
