FLUFFY PEACH PUDDING 
1 pkg. (4 serving size) vanilla flavor pudding & pie filling
1/4 tsp. nutmeg
1 1/2 c. milk
2 egg yolks
2 egg whites
3 tbsp. sugar
1 1/2 c. diced peeled fresh peaches (or use 1 can 6 oz. sliced peaches, drained & diced)

Combine pudding mix, nutmeg and 1/4 cup of the milk in saucepan. Blend in egg yolks and add remaining milk. Cook and stir over medium heat until mixture comes to a full boil. Remove from heat.

Beat egg whites until foamy throughout. Gradually beat in sugar and continue beating until meringue will stand in soft peaks. Fold in hot pudding; then fold in peaches. Serve warm or chilled. Makes about 3 3/4 cups.
