COCONUT CUSTARD PIE 
1/2 stick melted butter
1/4 c. cornstarch OR all purpose flour
3/4 c. sugar
1/4 tsp. salt
2 c. milk
3 egg yolks
1 tsp. vanilla
3 or 4 drops coconut flavoring (optional)
1 c. flaked coconut
3 egg whites for the meringue

Blend together the melted butter, cornstarch, sugar and salt. Gradually add milk. While stirring, heat to boiling point. Remove from heat and stir in slightly beaten egg yolks. Return to heat and cook 2 or 3 minutes; stirring constantly. Add vanilla; cool and stir in coconut. Pour into a baked pie shell and top with meringue made by beating the 3 egg whites until foamy. Gradually add 2 tablespoons sugar and continue beating until stiff peaks form.
