KATHERINE'S CHICKEN 
4 boneless, skinless chicken breasts
4 strips bacon or 4 half slices sandwich ham
1 c. grated Cheddar cheese
1 can mushroom soup
1/2 can water

Lightly brown meat in skillet with cooking spray. Arrange chicken in baking dish. Lay a strip of bacon or piece of ham over each piece lengthwise. Mix soup and water. Pour over chicken. Bake, covered, at 350 degrees for 30 minutes. Remove from oven. Sprinkle cheese over chicken and soup. Return to oven until cheese is melted. Serve over rice.
