CARROT COOKIES 
1 c. brown sugar
3/4 c. butter, at room temp.
1 egg, beaten
1 c. raw finely shredded or grated carrots
2 1/4 c. all-purpose flour
1/2 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt
3/4 c. chopped nuts

Cream sugar with butter until fluffy. Beat in egg and stir in carrots. Sift flour with soda, baking powder and salt. Add to creamed mixture, if desired, add grated orange rind for flavor. Drop by teaspoon on greased cookie sheet leaving about 2 inches between cookies. Bake in moderate oven, 375 degrees, until done. Remove from pan while warm.
