TOFU "EGG" SALAD | |
1 lb. tofu 1/2 tsp. salt 1/4 to 1/3 c. mayonnaise 2 tsp. prepared mustard 1/4 tsp. garlic powder Pepper to taste 1 green pepper, minced 1 rib celery, chopped finely 2 to 3 scallions or 1 sm. onion, minced (optional) 1/8 tsp. turmeric (optional) 1/2 tsp. soy sauce (optional) Mash tofu to a crumbly consistency, add mayonnaise, mustard, and seasonings; mix well. Add vegetables and mix again. Serve on lettuce leaves or in sandwiches with lettuce or sprouts. Vary the seasonings to taste and try using other herbs or vegetables like parsley, chives, or grated carrot. |
