POTATO (TOFU) SALAD | |
8 oz. tofu 2 c. cauliflower (raw pieces) 1 c. diced celery 4 green onions, chopped 6 hard-boiled eggs, chopped Cut cauliflower, onion, celery, and eggs. Mix together with 3 tablespoons of diet mayonnaise. Salt and pepper to taste. Last, fold in tofu which has been cut into small chunks. Refrigerate. |
