POTATO CAKES 
1/2 c. mashed potatoes
1 egg
1/4 c. finely chopped onions
2 1/2 tbsp. flour
Salt & pepper to taste
Oil for frying

Combine all ingredients (except oil) in bowl; mix well. Drop by teaspoonfuls into hot oil in frying pan. Brown on both sides. Drain on paper towels. Eat while hot.
