POOR MAN'S LOBSTER 
3-4 lbs. fish
4 qts. water
2 tbsp. dill seed
4 tbsp. salt
2 tbsp. caraway seed
3 tbsp. chopped parsley

Combine ingredients in kettle and bring to a boil. Add cleaned filleted fish. Cut into serving size pieces. Simmer gently for 10 minutes. Remove from liquid with slotted spoon. Let set 2 minutes before serving. Serve with melted hot butter for dipping.
