RED PEPPER JELLY 
1 1/2 bu. sweet red peppers (about 40)
Salt
1 qt. and 1 pt. vinegar
5 lbs. sugar

Wash, seed and run through grinder (leave no seeds). Salt lightly and stand 2 or 3 hours. Wash thoroughly and drain in sieve for one hour. Add vinegar and sugar. Boil 1/2 hour. Seal in glass.
