CHILLED LEMON ASPARAGUS 
2 lbs. fresh asparagus
Salad greens
Lemon slices
Pimento strips

MARINADE:

2 tbsp. finely chopped onion
1/3 c. fresh lemon juice
1/4 c. water
1/2 c. sauterne
1/8 tsp. garlic salt
1/4 tsp. dried oregano
2 tbsp. vegetable oil
3/4 tsp. salt

Steam asparagus until tender. Combine marinade ingredients. Pour over asparagus, cover and refrigerate for several hours or overnight. Drain and arrange on crisp greens. Garnish with lemon slices and pimento. For special events, tie asparagus in serving size bundles with long strips of lemon peel or pimento.
