FRENCH ONION SOUP 
4 lg. Spanish onions
1/4 c. butter
1 tbsp. flour
1 1/2 qt. beef consomme
Toasted French bread
Parmesan cheese

Peel and slice onions thinly, then separate into rings. Heat butter in large saucepan and add onion rings. Cook slowly over low heat, stirring constantly until rings are golden brown. Stir in flour and blend. Pour in consomme until soup begins to boil. Cover and simmer 20 - 30 minutes. Serve in heated dishes containing rounds of toasted bread heaped with cheese. Serves 6.
