WALNUT ICEBOX COOKIES | |
1 c. butter 1 c. brown sugar, packed 1 c. white sugar 1 tsp. baking soda 2 eggs 3 c. flour 1 c. walnuts, chopped Cream butter, and brown and white sugars. Add eggs and beat. Combine baking soda and flour and slowly add to creamed mixture until well mixed. Add walnuts (pecans are good too!) This will be a stiff dough. Place dough on waxed paper and shape into a roll, keeping the waxed paper between you and the dough. Put dough roll in freezer overnight. Cut into thin (1/8 inch) slices with a sharp knife. Place on slightly greased cookie sheet and bake until light brown at 350 degree preheated oven. They bake quickly, so watch them! Bake only the amount of cookies you want and keep the rest of the roll in freezer for fresh baked cookies another day! |
