LASAGNE 
2 lbs. Italian sausage or ground beef
16 oz. can tomatoes
12 oz. tomato paste
2 cloves garlic, minced
1 tbsp. dried basil leaves
10 oz. lasagna noodles
2 beaten eggs
3 c. cottage cheese
1/2 c. Parmesan cheese
3 tbsp. dried parsley
1/2 tsp. pepper
1 lb. Mozzarella cheese
1 1/2 tsp. salt (use divided)

MEAT SAUCE: Brown meat, drain off excess fat. Add tomatoes, garlic, tomato paste, basil and 1 teaspoon salt. Simmer uncovered for 30 minutes, stirring occasionally.

Meanwhile, cook noodles according to package directions, drain and rinse.

FILLING: Beat eggs, 1/2 teaspoon salt, cottage cheese, Parmesan cheese, parsley and pepper. Slice or grate Mozzarella.

To assemble, layer half of noodles in 9x13 inch pan, half of filling, half of Mozzarella, half of meat; repeat. Bake at 375 degrees for 30 minutes. Let stand 10 minutes before slicing and serving.
