LEMON MERINGUE PIE 
1 baked 8 or 9 inch pie shell

FILLING:

4 tbsp. cornstarch
1 1/2 c. sugar

Mix together.

Add:

3 egg yolks
Juice and grated rind of 1 lemon

Mix well.

Add:

1 1/2 c. boiling water

Cook over medium heat until thick. (3 minutes after it begins to boil again.) Stirring constantly. Cool - pour into pie shell.

MERINGUE:

Beat 3 egg whites until stiff but not dry. Gradually beat in 6 tablespoons sugar. Spread meringue over filling sealing until the edge. Bake in hot oven at 425 degrees for 4-5 minutes until browned.
