BAKED ZITI CASSEROLE 
1 (1 lb.) Ziti noodles
Onions and garlic
Tomato paste
Parsley, oregano
2 (15 oz. each) tubs Ricotta cheese
1 (8 oz.) bag shredded Mozzarella
1 lb. ground beef can be added to sauce if desired

Prepare Ziti as label directs; drain. Set aside. Sauté until clear, 1/4 cup oil, 1 cup chopped onion, 1 large clove garlic, 1/2 tsp. basil. Add 1 (2 lb.) can tomatoes, 1 cup water, 1/2 cup red wine, 1 (6 oz.) tomato paste, 1 tablespoon salt, 1 tablespoon sugar, 1 tablespoon oregano, 2 tablespoon chopped parsley. Simmer one hour covered. Mix up 2 (15 oz.) Ricotta, 1 (8 oz.) shredded Mozzarella, 2 eggs, 1 teaspoon chopped parsley, 1 teaspoon salt. Layer into 2 (9 x 12 inch) dishes or 1 (5 quart) dish. Put thin layer of sauce on bottom, half of Ziti, cheese mixture, more sauce and sprinkle with Parmesan cheese.

Bake at 350°F for 60 minutes if made night before. Bake at 350°F for 45 minutes if baked immediately.
