PEANUT BUTTER OATMEAL COOKIES 
3/4 c. butter flavored Crisco
1 c. peanut butter
1 1/2 c. firmly packed brown sugar
1/2 c. water
1 egg
1 tsp. vanilla
3 c. Quaker Oats (quick or old fashioned, uncooked)
1 1/2 c. all purpose flour
1/2 tsp. baking soda
Granulated sugar

Beat first three ingredients until creamy. Beat in water, egg and vanilla. Add combined dry ingredients; mix well. Cover and chill 2 hours. Heat oven to 350 degrees. Shape dough into 1" balls. Place on ungreased cookie sheet, flatten with tines of fork to form a criss cross pattern. Dip fork in sugar before flattening. Bake 9 to 11 minutes or until edges are golden brown. Cool 1 minute on cookie sheet; remove to wire rack. Cool completely. Store tightly covered. Makes about 7 dozen.
