ZUCCHINI CASSEROLE 
3 c. cubed zucchini, lightly cooked and salted
3 carrots, shredded
1 med. onion, chopped
1 (8 oz.) can mushrooms
1 can cream of chicken soup
1/2 c. sour cream
1 box chicken flavored stuffing mix, mix together with 1/3 c. melted butter
1 c. Brick cheese or Mozzarella cheese
1 lb. ground sausage, browned and drained
1/2 c. more cheese (for the top)

Mix ingredients with 1/2 of the stuffing; put into a greased casserole dish (9 x 13 inch) and top with other half of stuffing and the 1/2 cup of cheese. Bake, uncovered, at 350 degrees for 1 hour.
