MICROWAVE SUNSHINE POTATOES 
2 tsp. freshly grated lemon peel
3 tbsp. grated Parmesan cheese
1/2 tsp. paprika
1/4 c. butter, melted
1 tbsp. freshly squeezed lemon juice
3 lg. potatoes, thinly sliced
Lemon wedges

Combine lemon peel, cheese and paprika; set aside. Combine melted butter and lemon juice; set aside.

Arrange potato slices in a 12 x 7 1/2 inch baking dish. Brush cut surface of potatoes with lemon-butter mixture. Sprinkle cheese mixture over potatoes. Cover with plastic wrap. Raise oven shelf. Cook on HIGH 10 to 12 minutes; remove cover. Brown 5 to 6 minutes. Serve with lemon wedges.

Makes 4 servings.

Since microwave ovens vary in power, you may need to adjust your cooking time.
