MICROWAVE CLAM CHOWDER 
4 strips bacon
2 potatoes, peeled and cubed
2 cans clams, undrained
1 med. onion
2 cans evaporated milk
4 tbsp. butter

In casserole dish (microwave) lay bacon strips and cover with paper towel. Cook 6 to 8 minutes. Remove, crumble, and set aside. In remaining grease, add onion and potatoes. Microwave 10 minutes or until tender. Add 2 cans clams (including juice), 2 cans evaporated milk and butter. Return to microwave and heat through. Add crumbled bacon.

DIETITIAN'S NOTE:

Due to this recipes' key ingredients, it cannot be altered to lower total calories, fat, cholesterol and sodium without significantly altering the taste. Thus, the key is to eat this delicious soup sparingly.

Since microwave ovens vary in power, you may need to adjust your cooking time.
