SWEET POTATO CASSEROLE | |
3 c. mashed sweet potatoes (big can in light syrup) 1/2 c. sugar 1/2 c. milk (only if using fresh potatoes that are not moist) 1/3 c. butter, softened 2 eggs 1 tsp. vanilla 1/2 tsp. cinnamon 1/2 tsp. nutmeg Topping: 1/2 c. chopped pecans 1/2 c. brown sugar 1/4 c. flour 1/4 c. butter, melted Combine first 6 ingredients. Pour into baking dish. Top with combined topping ingredients. Bake at 375°F until brown, about 30 minutes. |
