MELT-IN-THE-MOUTH COOKIES 
3/4 c. shortening
1/2 c. brown sugar
1 egg
1/2 c. peanut butter
1/2 tsp. salt
1 3/4 c. flour

Cream shortening and sugar; blend in peanut butter, salt, egg, vanilla and flour. Shape into balls, about 1". Make a deep well in center of each with thumb. Bake on ungreased cookie sheet and cool on racks. Fill center with tart jelly. Bake at 350 degrees for 12 to 15 minutes.
