MOCK TAMALE PIE 
1 pkg. (12) corn tortillas
1 lg. can low fat refried beans, warmed
2 1/2 lb. shredded American cheese (fat free)
1 lg. onion, chopped fine
2 c. vegetable chili (may be leftover chili)

Warm tortillas by dipping in hot water. Pat dry. Place about 2-3 tablespoons refried beans down center of each. Place 2 tablespoons shredded cheese and 1 teaspoon onion on each. Fold tortillas around mixture and place in 9 x 13 inch baking dish, sprayed with Pam, seam side down. Pour chili over top and sprinkle cheese over. Bake at 350 degrees for about 20 minutes or until cheese is melted inside tortillas. Serve with salad and baked flour tortilla chips.
