PORK JAMBALAYA 
2 tbsp. oil
1 1/2 lbs. pork cut in cubes
1 chopped onion
1/2 c. green onion
2 tbsp. parsley
1/4 c. bell pepper
1/2 c. dry white wine
1 tsp. garlic
1 1/2 c. raw rice
Salt and pepper to taste
Louisiana Hot Sauce to taste
Chicken stock or water

Over medium heat in large pan heat oil, brown off the pork, then remove from pot. Add onion, parsley and bell pepper; cook unitl brown. Stir in wine, garlic, rice, meat, salt and hot sauce. Add stock or water to cover rice by 1/2 inch. Cook over medium heat. Bring to a boil and then reduce heat. Cover and cook at least 1 hour. Then check rice for doneness. Stir, cover and let steam another 15 to 20 minutes.
