4 med. potatoes, precooked
1/2 chopped onion
1/2 chopped green pepper
1/2 c. sliced mushrooms
2 tsp. butter
Salt and pepper to taste

Scrub potatoes. Microwave 4 minutes, turn, pierce cook 4 minutes more. In fry pan cook onion and pepper in butter until soft, add chopped potatoes. I leave skins on, almost brown potatoes. Add more butter if you must. Add mushroom, cook 1 minute. Salt and pepper.
