POTATO SALAD O'BRIEN 
9 med. potatoes (about 3 lbs.)
Buttermilk Dressing, following
3 hard boiled eggs, diced
1/2 c. sliced green onions
Paprika, to taste
1/3 c. sliced celery
2 tbsp. chopped pimientos
1/2 c. chopped green peppers

Cook potatoes until tender. Drain and peel. Dice into large bowl. Pour dressing over warm potatoes and mix. Mix in eggs, celery, onions, peppers and pimientos. Chill.

BUTTERMILK DRESSING:

1 c. buttermilk
1/4 c. sweet pickle relish
1/2 c. mayonnaise
1 tbsp. prepared mustard
1 tsp. salt
1/4 tsp. garlic powder and dill weed
1/8 tsp. pepper
2 tbsp. chopped parsley

In bowl, mix buttermilk, mayonnaise, relish and mustard. Blend in remaining ingredients. Yields: 2 cups.
