MOCK POTATO SALAD 
1 head cauliflower
3 boiled eggs
1 sm. onion
1 c. tuna (opt.)
1 tbsp. pickle relish
Lite mayo to taste
Mustard to taste

Break cauliflower into flowerettes and cook until crunchy; cool. Mix 2 eggs and other ingredients together. Use 1 egg on top for decoration.
