SPANISH RICE (Lo-Fat) 
2 chicken bouillon cubes
1 lg. onion, chopped
1 green pepper, chopped
3 slices turkey bacon, chopped (or 1/2 lb. ground turkey)
1 (28 oz.) can tomatoes
1 (15 oz.) can tomato sauce
Pinch of saffron
Salt if desired
2 (15 1/2 oz.) cans red beans
2 c. raw rice
2 c. water

Saute bacon, onion in a few drops water. Add pepper, tomatoes, spice, beans, rice and water. Cover and cook until rice is done.
