STIR-FRIED PORK WITH
LEMON-GARLIC SAUCE
 
2 tbsp. olive oil
1 1/2 lb. lean pork, cut into thin strips
3 large cloves garlic, minced
Salt and pepper to taste
Juice of 1 large lemon
Freshly chopped parsley

Heat the olive oil in a large skillet over medium-high heat. Add the pork strips and stir-fry until starting to brown. Add the salt, pepper, and garlic. Continue to stir-fry until lightly browned and done, about 5 minutes. Add the lemon juice and cook another minute. Sprinkle with parsley. Serve immediately.

Note: If you want more sauce, just add more lemon juice. This can be made with chicken or veal strips.
