CREAM PIE (BANANA AND COCONUT) 
1/3 c. flour
1/4 tsp. salt
2 tbsp. butter
3 egg whites
2/3 c. sugar
2 c. milk, scalded
1/2 tsp. vanilla
9 inch pie shell, baked
3 egg yolks, slightly beaten
6 tbsp. sugar

Mix flour, sugar and salt; gradually add milk. Cook in double boiler until thick, stirring constantly. Add hot mixture slowly to egg yolks; stir into remaining hot mixture. Cook 2 minutes; cool. Add butter and vanilla; pour into baked shell. Spread with meringue. Bake at 350 degrees for 12-15 minutes.

For banana pie, slice 2-3 bananas into the shell before filling; for coconut pie, add 1 cup coconut to filling and sprinkle with 1/2 cup on top of meringue.
