BAKED SHOESTRING POTATOES | |
4 med. baking potatoes 3 tbsp. butter Salt and pepper 1 c. sharp Cheddar cheese, grated 2 tbsp. chopped parsley 1 c. half & half Cut a 48 inch length of aluminum foil and fold in half. Cut the potatoes in thin lengthwise strips, as for French fries and place just off the center on foil. Dot with butter, sprinkle with salt, pepper, cheese and half of the chopped parsley. Pull edges of foil upward, then pour cream over. Fold foil. Cook over glowing coals or place on shallow pan and bake in very hot (450 degree) oven for about 1 hour or until done. Open and sprinkle with remaining parsley. |
