ASPARAGUS CHEESE SOUP | |
1/4 c. butter 2 tbsp. minced onion 3 tbsp. flour 1/2 tsp. salt 1/8 tsp. pepper 2 c. milk 2 c. chicken broth (or 3 bouillon cubes in boiling water) 1/2 lb. sharp American cheese, shredded 1 c. finely chopped cooked asparagus Melt butter in large saucepan over very low heat. Saute onion in butter until tender, but not brown. Remove from heat. Cook, stirring constantly, until mixture is smooth and thickened. Add remaining ingredients and heat until cheese has melted. Garnish if desired, with chives or parsley. Serves 6. |
