ASPARAGUS CHEESE SOUP 
1/4 c. butter
2 tbsp. minced onion
3 tbsp. flour
1/2 tsp. salt
1/8 tsp. pepper
2 c. milk
2 c. chicken broth (or 3 bouillon cubes in boiling water)
1/2 lb. sharp American cheese, shredded
1 c. finely chopped cooked asparagus

Melt butter in large saucepan over very low heat. Saute onion in butter until tender, but not brown. Remove from heat. Cook, stirring constantly, until mixture is smooth and thickened. Add remaining ingredients and heat until cheese has melted. Garnish if desired, with chives or parsley. Serves 6.

Really good, delicious soup and easy to make! I used frozen asparagus from my garden and substituted heavy cream for most of the milk. I'm sure it would be just as good with regular milk though. I also used shredded cheddar cheese instead of American since I didn't have any on hand. I will keep this recipe and make again!
