ORANGE POPPY SEED MUFFINS 
1/2 c. sour cream
1/3 c. butter, soft
1 egg
1 tbsp. grated orange peel
3 tbsp. orange juice
1 c. sugar
1 1/3 c. flour
1/2 tsp. salt
1/2 tsp. baking soda
1 tbsp. poppy seeds

Combine sour cream, butter, egg, orange peel and juice in bowl. Beat until smooth. Combine remaining ingredients, blend into creamed mixture only until all ingredients are moistened. Spoon into muffin pan and bake at 400 degrees for 17 to 20 minutes.
